500g 1-2% fat cottage cheese, 1 medium egg, 5g coconut oil, 20g coconut flour, 40g rice flour, a pinch of vanilla

1. If you're not a fan of coconut - use 20 more grams of rice flour instead of coconut flour
2. The cottage cheese should be well drained
3. If you don't have rice flour use semola, corn flour or all-purpose wheat flour
4. Cook cottage cheese fritters over medium or medium-low heat, they should be cooked through but not too dark

1 orange (juice and zest), 60ml almond milk (any vegetable milk or low-fat milk), 50g walnuts (optional, any nuts on your choice),
1 medium carrot (approx.100g), grated 120g wholemeal flour (can take spelta/kamut flour), 70g greek or low-fat natural yoghurt, 2 medium eggs, 1/2 baking powder, 1/2 baking soda, 1/2 tbsp olive oil (or coconut oil), 100g low-fat cream cheese, 2-4 tbsp agava syrup (maple, date syrup or honey), 1/2 tsp of cinnamon, ginger, nutmeg, vanilla (each), pinch of salt

Magical muffins by Kayla Itsines. I simply adore all pastry with carrot, but usually it's not as low-calorie as it seems to be. For example, usual Starbucks muffin is approximately "weights" 400-500 calories. This amazing recipe is something else! Without nuts and frosting it's just 136 cal, with frosting - 175 cal and 228 cal with with nuts and frosting! At the same time they are juicy, spicy and delicious. Enjoy!

Wholemeal muffins with berries by Gordon Ramsay (from Healthy Appetite book) are both tasty and healthy. They are ideal for breakfast, during the day snack or as a dessert. The best way to serve is as soon as they are baked but you also can keep them in an airtight container for a couple of days.

INGREDIENTS:
200g raspberry (frozen or fresh), 75g vegetable oil (I used coconut oil), 300g wholemeal spelt flour, 2 big ripe bananas, 50g almond flakes (optional), 1-2 eggs (depending on size), 50g brown cane sugar (I used light Muscovado), 300 ml greek (or any natural) yoghurt, 1,5 tsp baking powder, 1 tsp baking soda,
pinch of Himalayan salt

You can take any kind of berries on your choice
Coconut oil is perfect here, but you can also use any vegetable oil (olive or grape seed) and even melted butter
Instead of spelt flour you can take wholemeal wheat flour. Also 100-150g of spelt/wheat flour can be replaced by oat flour, but muffins will become thicker
You can use coconut sugar, honey or maple syrup if you don't have Muscovado

This is honestly the best carrot cake ever! Juicy, spicy, so delicious - you definitely won't be disappointed. Make it for Christmas or New Year or any special occasion

INGREDIENTS:
330g plain flour, 200g brown sugar (Demerara), 4 large eggs, 350g carrots, 260g coconut oil (or any vegetable oil), 1 tsp cinnamon, cardamom, ginger, nutmeg (1tsp of each spice), 2 tsp baking powder, 1tsp baking soda, 1 tsp salt

For the icing: 500g cottage cheese (or cream cheese), 250g Mascarpone cheese (or heavy cream), 100g caster sugar, 1tsp vanilla

So just find fresh, ripe and sweet figs and go ahead, it's definitely worth it!

Traditional Russian cheesecake is a very healthy thing. Use low-fat cottage cheese, corn flour and less sugar. You can also take wheat or rice flour and use agava or maple syrup instead of sugar. Here we used Muscovado, which is real natural sugar. Sour cherry can be fresh or frozen, or it can be raspberry, cranberry or currants

INGREDIENTS:
800gr cottage cheese (well-drained), 300gr fresh or frozen sour cherry, 125gr corn flour, 4 eggs, 250gr creme fraiche or sour cream, 4 tbsp wheat flour or corn stark, 125gr sugar, vanilla to taste

Prepare the cake tin using baking parchment: oil the tin, stick the parchment.
Transfer the cottage cheese mixture, level the top and discard.
To make the filling mix the sour cream, sugar, 1 tsp of vanilla, 2 yolks and 4 tbsp of wheat flour. Finely beat the mixture.
Place the sour cherry onto the cottage cheese mixture and pour the filling. Bake for 50 min in a preheated to 180 degrees oven. After baking leave until completely cooled

Serve with some icing sugar, fresh mint leaves or berries, or alternatively with vanilla sauce or sweet condensed milk as it served in Russia

The recipe is dedicated to celebration of orthodox style Easter!
These cottage cheese muffins are a variation of traditional orthodox Easter pastry called "Kulich" , but lighter, easy to make and do not contain yeast

INGREDIENTS:
1 free-range egg, 300gr wheat flour, 10gr baking powder, 1/2tsp salt, 125gr cottage cheese, 50 gr chopped walnut, 125gr sugar, 125gr butter, 70gr candied fruit, 50gr dried cranberry or raisins, 1 orange, 1tsp vanilla

Finely beat the butter at room temperature with the sugar. If your butter is too called - simply grate it. Add the egg and beat again, then add the cottage cheese, vanilla, zest of 1 orange and juice of 1/2 orange and finely beat once again.
Sieve the flour, baking powder and salt into a separate bowl. Combine two mixtures, add the nuts, cranberry and candied fruit.
Line a 12-hole muffin tray with paper cases or use a silicon muffin tray. Bake for 25 min in a preheated to 180 degrees oven.Decorate with icing sugar, glaze or meringue
