Skinny Carrot Cake Muffins
A healthier version of famous crumble cake - we made it without refined wheat flour, sugar, without butter - it's totally vegan. Wholemeal almond flour gives it wonderful chocolate colour and amazing aroma. So go ahead, choose your favourite filling and create!
INGREDIENTS:
1 orange (juice and zest), 60ml almond milk (any vegetable milk or low-fat milk), 50g walnuts (optional, any nuts on your choice),
1 medium carrot (approx.100g), grated 120g wholemeal flour (can take spelta/kamut flour), 70g greek or low-fat natural yoghurt, 2 medium eggs, 1/2 baking powder, 1/2 baking soda, 1/2 tbsp olive oil (or coconut oil), 100g low-fat cream cheese, 2-4 tbsp agava syrup (maple, date syrup or honey), 1/2 tsp of cinnamon, ginger, nutmeg, vanilla (each), pinch of salt
